When i was doing drywall the only time we used 5 8s was like said above is for fire wall from grage wall into the home we did lots of custom homes and never had to use 5 8s on the celing.

But 5 8 is still required for ceilings why.
But a 1 2 board exposed to fire will only last for 10 minutes.
Even easier are ultra light 1 2 inch panels which are 13 pounds lighter than conventional 1 2 inch drywall.
Id use 1 2 inch you will be fine.
